A year ago…

A year ago today, Randy and I started on a journey to get healthy.  We thought that a weight goal was our destination, and we thought the only thing we would need to change would be what we ate, and we would be GOLDEN!

Little did we know.

Our lives were turned upside down, inside out, and topsy turvey in the best sense of the word.  Looking back on the year, we met our weight loss goals, but that wasn’t the end of the journey. Simply the beginning rather.  Now we are on a journey to maintain these new, healthy bodies.  And we DID change what we ate, significantly.  We also changed how we thought about food.  Its now not just a form of entertainment, or solace  but rather fuel for our body, that we are blessed to enjoy.  We changed habits, and we changed our outlook.

It has been an eventful year, and a lot has changed.  I am so happy to look back at how far we have come, and SOOOO excited to see where we will go!

I am a teacher by day, and a wanna-be chef by night. I teach art and Spanish at a small school in Salem, Oregon to a fantastic group of soon-to-be world changers. I've loved cooking since I was a kid, and day dreamed while reading Betty Crocker's giant cookbooks. They were my picture books! I also work with a local non-profit that is doing some amazing things in Haiti. I have an amazing husband who I love to pieces.
