Bean Sprout Salad

I always seem to buy bean sprouts, and they tend to go bad in the fridge.  So before they could rot on me, I thought I’d make a salad out of them.

It’s kind of an everything but the kitchen sink kind of salad.  But it worked out pretty well.

 Tuna Salad 4

Ingredients:

1 zucchini, diced

1 bag of bean sprouts

1 can of tuna

4 hard boiled eggs

1/2 cup feta

Tuna Salad 1

Dressing:

1/4 cup Greek yogurt

2 Tbsp fish sauce

1 tsp soy sauce

3 Tbsp PB2

1/2 cup rough chopped cilantro

1/4 cup water

Rooster Sauce to taste

Tuna Salad 2

Whisk all together
Tuna Salad 3

Toss with the remaining ingredients.

Makes for a good power snack!
